When Hen Was on Her Way to Market 

RECIPES

POLENTA

You will need:

4 cups water
1 cup polenta (coarsely ground cornmeal) 
(You can also use 1/2 cup polenta and 1/2 cup finely ground cornmeal)
1 - teaspoons salt
1 tablespoon pork lard or butter

Optional:

milk
sour cream (yogurt)
grated cheese
fried bacon
caramelized onion

Preparation:

In a large saucepan bring water to a boil. Add salt and pork lard or butter. Pour polenta slowly into water, and cook over low medium heat whisking constantly until grains are tender and there are no lumps.

You can eat polenta by pouring some milk or sour cream (yogurt) over it. Or stir in some grated cheese for a creamy version. 
For a more savory flavor, add pieces of fried bacon and/or caramelized onion.
